Umeboshi, literally means Salted Japanese plums, are very popular picked things which usually eat as filling when making rice ball or serve as a side dish for Japanese breakfast. Traditionally this is made by harvesting plum when they ripen around June and packed them in a barrels with salt to keep aged. This is how naturally we local people crave for something made by Umeboshi around this time of year😘 Today’s recipe is Grilled Roll Sardines with Umeboshi paste.


[ Ingredients ]
*6 fillets sardines *2 Umeboshi ( Salted plum )
*1 /2 tsp vinegar *1/2 tsp miso paste *1/2 tsp soy sauce * 1/2 myoga ( optional ) * 6 Shiso leaves * 1 Tbsp starch       * 1 Tbsp olive oil
* 1/2 tsp salt
* 1 tsp white sesame seeds


[ Directions ]
1️⃣Mince the Umeboshi to make paste, then add vinegar, miso, soy sauce, chopped Myoga all together to mix well.
2️⃣Sprinkle salt over skin part only and pat dry with paper towels.
3️⃣Place a shiso leaf and umeboshi paste with 1tsp amount for each fillet and wrap. Lightly dust each part of fillet with starch and secure with a skewer.
4️⃣Apply olive oil and heat the pan with mid heat. Fry about 90 seconds of each sides of fillet with rid until crispy and getting browned.
5️⃣Remove a skewer and place on the plate garnished with chopped Shiso leaves, sprinkle white sesame seeds if you like.
