OKONOMIYAKI

-Japanese Savoy Pancake - 

Okonomiyaki is a Japanese savoy pancake containing a varieties of ingredients in a flour based batter and topped with condiments such as dried bonito flakes, dried seaweed after applying okonomiyaki sauce and Japanese mayonnaise. This dish is available all over Japan but especially in the cities of Osaka and Hiroshima are very popular and shouldn’t miss when you visit there. 😊In Japan, usually people go out and eat Okonomiyaki at restaurants that specialize in this dish but you can easily make this at home ✨

 

[ Ingredients ] * 60g All purpose flour
* 90ml Dashi *M sized egg
*1/ 4 tsp salt *20ml cooking sake
*150g Cabbage *40g Japanese Yam *25ml light soy sauce *Octopus/ Prawn ( optional )
*100g pork belly *1.5 Tbsp canola oil [ Finishing touches ]
*Okonomiyaki sauce ( mix all together -Ketchup 1Tbsp, Worcester sauce 1Tbsp, Soy sauce 1tsp, Honey 1tsp ) *Japanese mayonnaise ( garnish )
*Dried see weed ( garnish)
*Dried bonito flakes ( garnish )

 

[ Directions ]
1️⃣Chop Cabbage into pieces with 1cm cubes and squeeze to remove extra liquid. Set aside. Mix all purpose flour, dashi, salt, cooking sake, light soy sauce all together in a large bowl.Refrigerate.
2️⃣Grate Japanese yam and add this into 1️⃣. Add egg and mix well until all are combined then add chopped cabbage and bite sized octopus, prawn if you like.
3️⃣Sliced pork belly. Set aside.
4️⃣Heat canola oil with mid heat and spread the batter in a circle with size of 18cm diameter in the frying pan and cook until the bottom is nicely getting browned. Place sliced pork belly on the top and flip this over and cook another 5 minutes with mid heat.
5️⃣Apply Okonomiyaki sauce and add Japanese mayonnaise with pattern. Garnish dried seaweed and bonito flakes. Happy Cooking 👍
